Recipe for red velvet cake?

This weekend my friend Kim turns 45, and we've been invited to a backyard picnic (with mojitos and Cuban sandwiches, mmm) to celebrate.  I volunteered to make the cake, and Kim's husband Jason has intimated that red velvet cake is Kim's favourite.  To my shock, not one of my cookbooks had a recipe; I found a couple online (one from Bon Appetit looks promising), but I thought I'd check with the collective genius of this list before I made any moves.
