Spinach Salad #1

(this recipe is good for lunch/dinner)
servings: 4 to 6

1 pound Fresh spinach
2 pink grapefruits, peeled and sectioned
1/2 cup toasted sunflower seeds
Girards Champagne dressing to taste or a simple vinaigrette

Combine ingredients in a large salad bowl, toss and serve.
To make this salad easier use the refrigerated pink grapefruit sections by Dole, available at Costco and Sams Clubs or produce dept of groc.stores.
Alternatively you could use mandarin oranges and throw in a diced avocado.
