This cake was just what I was looking for: easy to make, vivid rosy colour, and very tasty. I took it to Kim's birthday party, where it completely disappeared in about ten minutes, which I think is a sign of its excellence. Notes: I threw caution to the winds and only used two pans; it came out fine, just needed a bit more time to bake. Having been warned, I buttered and floured my two pans extensively, and the cakes slipped out perfectly. Finally, next time I might add a bit more vanilla to the frosting -- I think a more defined flavour in the icing would set off the cake's nicely. But all in all, I can see why this cake is the toast of Brooklyn. Thanks, Sarah Jane!
