This came out great. I made it even less fussy by using only one pot and just dunking the bread in until it soaked up enough soup to stay down. I also added a parmesan rind and a tomato, which I've seen in other ribolita recipes, and I sauteed the garlic and some shallots before adding broth instead of just tossing them in later.
