The Best Bran Muffins

From The Best Recipe, of course.

These are a little bit more time-consuming than your average muffin, but they really are better.  Note: you need a food-processor.

1 1/2 cups all purpose flour
1/4 cup whole wheat flour
1 1/2 tsp baking powder
1/2 tsp baking soda
3/4 tsp salt
1-2 tsp grated orange zest
7 tbsp unsalted butter, softened
1/2 packed brown sugar
2 large eggs
1/4 cup molasses
1 1/2 cups non-fat yogurt
1 1/2 cups bran
1/2 cup raisins

1. Preheat oven to 375 F.  Grease muffin tin.
2. Combine dry ingredients in large bowl.
3. Cream butter until light and fluffy.  Add sugar.  Beat until combined.
4. Add eggs one at a time.
5. Beat in molasses.
6. Reduce speed, beat in yogurt and half flour mixture.
7. Beat in remaining flour mixture.  Add bran and raisins.
8. Pour into tin.  Bake 25 minutes or until tester comes out clean.

I took some liberties with this recipe, subbing canola oil for the butter (because I worry about saturated fat) and mixing the ingredients in the usual muffin fashion (because I'm lazy), and the muffins were still delicious, moist and molassesy.
